Blueberries Crumble Cookies

Did someone say buttery, soft and DELICIOUS blueberry cookies??! It’s almost like a pie but better and personal. These might be my best creation to be honest… They are so perfect for summer so don’t way TOO long!! 

**mixer / hand mixer is recommended for this recipe**

Prep Time:15 minutes

Cook Time:15 minutes

Total Time:30 minutes

Ingredients for blueberry compote:
  • 1 cup blueberries 
  • 1/3 cup sugar 
  • 1 tablespoon cornstarch 
  • 1 teaspoon lemon juice
  • 1/4 cup water 
Ingredients for the cookie dough:
  • 1 cup unsalted butter (room temperature) 
  • 3/4 cup brown sugar 
  • 1/4 cup sugar 
  • 1 eggs 
  • 1 tablespoon vanilla 
  • 2 1/4 cup all-purpose flour 
  • 1 teaspoon cornstarch 
  • 1 teaspoon baking powder 
  • 1 teaspoon salt 
  • 1/2 cup blueberries 
Ingredients for Crumble:
  • 1/2 cup brown sugar 
  • 1/4 cup all-purpose flour 
  • pinch of salt 
  • 3 tablespoon room temperature butter 

Instructions:

Step 1

Preheat oven to 350F (176C)

Step 2

In a saucepan, add your blueberries, sugar, cornstarch, water and lemon juice and mix and cook on medium heat until a compote like texture (liquidy jam) and lower the heat to a simmer. 

Step 3

while the blueberry compote are cooking down, it's time to make the cookie base. (keep an eye on compote so it doesn't overcook. 

Step 4

In a mixing bowl add butter, brown sugar, sugar and cream until light in color. 

Step 5

Add eggs and vanilla and mix until combined. Your compote is probably is ready so remove off the heat and put in a jar and let cool. 

Step 6

Once you added all of your wet ingredients, it's time for the dry. Add your flour, cornstarch, baking powder and salt. 

Step 7

Mix until JUST combined. And fold in your blueberries. and set a side. 

Step 8

Time to make the crumble: Add your brown sugar, flour, salt and butter to a small bowl and with your hands mix together until you have a send like texture. 

Step 9

Time so assemble; scoop your cookie dough to a pan and make little well with your fingers and add your compote. & Sprinkle the crumble on top. 

Step 10

Bake for about 15 minutes or until golden. 

Step 11

Let the cookies cool a bit and ENJOY! x
