Crepes Cake

This is a light, easy and of course delicious cake that is a good fit for any occasion. Birthday? yes. Hot summer night? yes. Just for fun because you’re craving dessert? yes!!!!

So basically, your go to breakfast (maybe??)

**blender and mixer recommended but optional**

Cool Time:10 minutes

Prep Time:10 minutes

Cook Time:15 minutes

Total Time:35 minutes

Ingredients for the batter:
  • 4 tablespoon unsalted butter (melted) + save a bit extra for the pan
  • 3/4 cup flour
  • 2 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 and 1/4 cup whole milk
  • 2 eggs
  • 1/2 tablespoon vanilla (optional)
For the whipped cream:
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 tablespoon vanilla (I like to use vanilla paste)
  • 1/2 teaspoon salt

Instructions:

Step 1

In a large bowl, add all of your batter ingredients. Usually I would start with all of my wet ingredients and move on to the dry. But if you're using a blender, non of this matter.

(sugar is a wet ingredient in this recipe).

Step 2

Once all of your ingredients are in your bowl and well combined, it's time to take our your blender for a spin. If you're not using a blender, I recommend using a whisk for all of this!

Step 3

Once your batter is all done (weather you used a blender or not) it should be  pretty smooth and thin batter.

Step 4

Now, this would be a great time to make your batter even more smooth, and strain in. But if you choose to skip this step, totally fine!

Step 5

Batter is now done and it's time to move over to the pan. I like to use a very flat pan but any pan works here.

Step 6

It's time to cook!

Be gentle when flipping and when moving your crepes around or they will break.

 

Step 7

Once your crepes are ready, put them on a plate and cover with a towel to keep that moisture locked. Let them sit covered for about 10 minutes so they cool down a bit as well.

Step 7

Whipped cream time!! In a bowl, whip together your heavy cream, powered sugar, vanilla and salt.

If you're using a mixer this will be easy but if not, it's a good arm workout.

Look for a firm but soft texture almost like a buttercream. DO NOT OVER MIX!! We don't want butter...

Step 8

Now that everything is ready for us, it's time to layer your cake.

First place your crepe and cover it with whipped cream and keep going until you have just a little bit of whipped cream left for the topping.

I made about 15 or so layers so just fyi!

Step 8

Finish off your cake with a bit of chocolate shaved on top and you're all done! This cake can be refrigerated before serving or after.

Cut it like a true cake and enjoy!
