Summer Strawberries Rolls

This recipe is one of my personal favorites. A light, fluffy and delicious dessert for that perfect summer night/ morning. It’s messy but fun and so comforting! Oh and that frosting is just TOO good.

Rest Time :1 hour

Prep Time:15 minutes

Cook Time: 30-40 minutes

Total Time:1 hours and 55 minutes

Ingredients for the dough:
  • 1 pack of active yeast (2 ¼ tablespoons)
  • 1/2 cup whole milk (warm)
  • 1/2 cup warm water
  • 2 eggs
  • ½ tablespoon salt
  • 1/2 cup sugar
  • 4 ½ cups all purpose flour
  • ½ cup unsalted butter (1 stick) cool but not cold
  • ⅓ cup heavy whipping cream (for baking)
Ingredients for the filling:
  • 1 stick of unsalted butter room temperature
  • ½ cup brown sugar or light brown sugar
  • 1/2 cup strawberry Jam
Ingredients for the frosting:
  • ½ stick unsalted butter
  • 1 pack of cream cheese (room temperature)
  • 1/3 cup heavy cream
  • 1 cup powdered sugar
  • 1 tablespoons vanilla paste
  • Pinch of salt

Instructions:

Step 1
How to start

In a mixing bowl add your WARM milk/water (can’t be hot or the yeast will die) and sprinkle your yeast on top and lightly mix. Cover and let them “bloom” for about 10 minutes

Step 2

Once you see “clouds” in the milk it’s time to make the dough

Step 3

Add eggs + sugar + salt and mix (using a hook attachment)

Step 4

Add your flour and mix until combined and can slowly add the rest of the flour (a little at the time)

Step 5

Once a dough it formed cube your butter and start adding a little at the time until fully incorporated

Step 6

Lightly oil your hands and pick up the dough out of the bowl and oil your bowl + dough

Step 7

Place back in the mixing bowl and cover and in a warm place for about an hour or until double in size (or in oven on proof mode 100F for a faster turn around).

Step 8
Time to make the filling:

Mix the butter and brown sugar in a bowl with a spatula until smooth

Step 9

Preheat your oven to 350F (176C)

Once doubled in size, roll out the dough (can lightly flour your surface) until pretty thin, and spread your butter/ brown sugar spread all over + add your jam on top. 

Step 10

Roll and cut. This may be messy since the jam is very liquidy. But enjoy it!! When rolling each dough (watch PT.1 of my tiktok below) make sure the jam is still inside the dough since it may fall out.  

Step 11

Place your rolls in a pan and pour the heavy cream all over the rolls (if you have left over just pour on top) and bake for about 30-40 minutes.

Time to make the frosting:

in another bowl or mixing bowl add your butter, cream cheese and heavy cream and cream until smooth and fluffy. Add vanilla, salt and powdered sugar until you get a gooey but stable consistency

Step 13

Once the rolls are out of the oven let them cool for about 10 minutes and spread frosting on top while they are warm (NOT hot) and serve!
