Raspberry Coffee Cake For One
I know sometimes we all crave one serving desserts. Here is my creation of a single serving of the best coffee cake you will have + I added a bit of raspberries to it too.

Prep Time:15 minutes
Cook Time:30-40 minutes
Total Time:55 minutes
- 1/3 cup flour
- 3 tablespoons brown sugar
- 1 tablespoon cinnamon
- Pinch of salt
- 2 tablespoons cold butter (unsalted)
- 1/4 cup butter (unsalted room temperature)
- 1 egg yolk
- 1 teaspoons vanilla
- 1/3 cup sugar
- 1/3 cup flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- Pinch of salt
- 1/4 cup milk
- A few raspberries (5-8)
Instructions:
Preheat the oven to 350F (176C)
In a bowl mix together the flour, brown sugar, cinnamon, salt and cold butter and use your finger to mix it all together until soft sand like texture
Refrigerate while making the cake batter
In another bowl mix together the butter, egg yolk, vanilla and sugar until smooth
Start adding the flour slowly while mixing
Add baking powder and baking soda and mix until combined
Batter may be a bit dry so add your milk and mix until you get the perfect smooth consistency
Fold raspberries in and butter your small little pan
Get your crumble from the fridge and start laying your cake (crumble, batter, crumble, batter and finish off with crumble on top)
Bake for 30-40 minutes (keep an eye on it)
Let it cool a bit and serve with a cup of coffee because that’s why it is called a “coffee cake”
