Rugelach (Chocolate roll ups)

April 11, 2024

We are going down a memory lane here because this dessert is my favorite flavor from my childhood. So let’s get this party started!!

Prep Time:45 minutes

Rest Time:60 minutes

Cook Time:30 minutes

Total Time:2 hours and 15 minutes

Ingredients for dough:
  • 1 cup water
  • 1 packet of active yeast (2 and ¼ tablespoons)
  • 1 teaspoon salt
  • ¼ cup sugar
  • 2 eggs
  • ½ cup firm butter (about 20 minutes outside the fridge)
  • 4 ½ cups of all purpose flour
Ingredients for filling:
  • 1/2 cup chocolate spread

Instructions:

Step 1

Side note before we start: if you're watching my tiktok first, I tried doing it in a different way, so make sure to follow these steps here for best results!!

Warm up your water until lukewarm.

Step 2

In a mixing bowl add your LUKEWARM milk and sprinkle your yeast into the bowl and let bloom for about 10 minutes.

Step 3

Once foam-like texture is floating to the top add your eggs, sugar and salt.

Step 4

Use the hook attachment to your mixer and let it mix.

Step 5

Start slowly adding your flour (I like to add half a cup at the time) until a dough forms.

Step 6
DOUGH TIME!!

Cut your butter into cubes and add them a few cubes at the time until they dissolve into the dough. Once that's all done, you should have a beautiful dough.

Step 7

Oil your dough and your bowl and let your dough rise for about 2 hours. (cover with a towel)

Step 8

Turn your oven on to 350F.

Once your dough has doubled in size, it’s time to roll and shape into whatever shape you like. I made long triangles for the shape that I wanted, but feel free to do as you wish. You can also cut them into long strips.

Step 9

Once you got the shape that you like, roll your dough one more time to be as thin as possible.

Step 10

Spread chocolate filling on the dough and roll.

Step 11

Place on a baking sheet with a layer or parchment paper or just oil your clean baking sheet.

Step 12

Bake for about 30 ish minutes.

Step 13

Once golden take it out and let it cool. & ENJOY!!! x
