Sugar Cookie Bars

Sometimes you want a cookie and sometimes you want to be extra and have it with some frosting on it?? I mean, because why not?!?!

**mixer is recommended for this recipe**

Prep Time:15 minutes

Cook Time:20-25 minutes

Total Time:35 minutes (ish)

Ingredients for the sugar cookie dough:
  • 1 cup unsalted room temperature butter 
  • 1 cup sugar 
  • 2 eggs 
  • 1 tablespoon vanilla 
  • 2 1/2 cups flour 
  • 1 1/4 teaspoon baking powder 
  • 1 tablespoon salt 
Ingredients for the frosting:
  • 1 cup unsalted room temperature butter 
  • 3 cups powdered sugar 
  • 1 teaspoon milk
  • 1 teaspoon vanilla 
  • 1 teaspoon salt
  • 1/4 cup sprinkles OPTIONAL

Instructions:

Step 1
How to start

Preheat the oven to 350F (176C)

Step 2

In a mixing bowl add your butter +  sugar and cream (mix) until light in color and fluffy (using the flat beater attachment)

Step 3

Add eggs (I like to whisk them with a fork before so they are well combined) and vanilla until well combined.

Step 4

Slowly add your flours + baking soda + and salt and mix on low speed until JUST combined (you don’t want to over mix this dough)

Step 5

Add your sprinkles of your choice (optional) and fold it or mix on low for just a few seconds. 

Step 6

Scoop out the dough to a squared pan and make sure the dough is flat. (or freeze and use whenever you want!)

Step 7
Bake!

Bake for 20-25 minutes or until golden. 

Step 8

For the frosting: 

In a mixer or a bowl with a whisk, add your butter, powdered sugar and whisk until fluffy. 

Step 9

Add the milk, salt and vanilla and mix until fully incorporated.  

Step 10

Once the cookie base is completely cooled, spread your frosting on top. Decorate to your liking, cut into squares and enjoy! x
